Carrot Cake


I was introduced to this cake by Sharadha on Kartik’s birthday & was totally smitten with it. However there was just this one minor issue though, my husband was a strict carrot hater (I have no idea how he’s a Bugs Bunny fan). But when an opportunity did strike in the form of two cute bunnies (Rishi & Ishaan), I decided to bake this cake for their birthday.

Ingredients

3 ½ cups of plain flour
1 ½ cups granulated sugar
½ cup brown sugar
2 tsp. ground cinnamon
2 ½ tsp.  baking  powder
4 cups shredded carrots
1 cup chopped pecans / walnut (optional)
4 eggs
1 cup veg oil
1 cup crushed pineapple (drained)ly
8 oz. Cream cheese (At room temperature)
½ cup butter, softened
1 tsp. vanilla essence
4 cups confectioners’ sugar

Preheat oven to 350 ° F/ 180° C.

Lightly spray two 9 inch round cake pans.

In a bowl, combine flour, sugars, cinnamon and baking powder. Add carrots and pecans / walnuts if using any. Mix well.

Take another bowl, beat egg and oil together and stir in the pineapple.
Add egg mixture to the flour mixture and mix until combined.

Divide the batter evenly in to the pans.

Bake for 40- 50 minutes until a tooth pick inserted comes out clean.

Remove from the oven and let cool for 10 minutes on a wire rack.
Invert the cake from the pan (loosen the edges of the cake from the pan) and let cool completely.

While the cake is cooling, let’s get on with our icing.
In a bowl. Beat cream cheese and butter until smooth using an electric mixer. Add confectioners’ sugar, (one cup at a time) and mix well.

Level the cakes and spread about ½ cup to ¾ cup icing over cake layer. Now, top with second cake (upside down) .  Now using a spatula (angled one) ice the cake with the remaining icing.


(Carrot topping- Carrots are made out of rolled fondant.  Divide the fondant and add orange and green colour to the fondant. Shape them into carrots and leaves and decorate).



Keep it in the refrigerator for a while to set. 





Best tasted when made one day ahead. 



This one goes with loads of love for both Rishi & Ishaan!!!!!!!!
