Coffee is
something that I have been in love with for a long time, so for one of the
Valentine’s Day, I decided to make a coffee based dessert for my husband. In
his terms he loved this dish, or it could be the fact that he couldn’t complain
after all the efforts I had put!!! Special day or not this Mocha Pie is
definitely one to be tried out by the coffee loving lot!!!
Ingredients
4 ounces Dark Chocolate baking bar/ chips
1/2 cup granulated sugar
3/4 teaspoon salt
4 egg yolks
2 1/2 cups milk
1 tablespoon +1/2 teaspoon espresso/coffee powder, divided
1- 1/2 cup Plain arrow root biscuits crushed

butter melted
1 cup heavy cream
3 tablespoons confectioners’ sugar
1 teaspoon vanilla essence

Preheat oven to
325°F/160°C.
In a bowl, combine crushed biscuits and butter. Press mixture evenly onto bottom and up side of 9-inch pie plate. Bake 10 minutes or until golden brown. Cool.
In bowl, whisk
together granulated sugar, salt and egg yolks. In saucepan, heat milk with 1
tablespoon of the espresso/ coffee powder to just under a simmer, whisk into
egg yolk mixture. Pour back into saucepan; cook, whisking constantly, until
thick.
Add chocolate; whisk until chocolate is melted
and mixture is smooth. Pour into crust and press plastic wrap onto surface of
filling; refrigerate at least 1 hour or until set.
Just before serving, whisk cream with
confectioners’ sugar, vanilla and remaining 1/2 teaspoon espresso/ coffee
powder until soft peaks form.
Refrigerate for
a while and then serve…. Mmmmm.. yuummm!!!!
