Tangy Sweet Mangoes


For those who are not accustomed to the Hyderabad summers, you just need to take a look at our electricity bill – mind boggler!!! But then the great mango has always come as a respite during our Indian summer. This next dish is not exactly something that is cooked & is more of a blend. But boy oh boy, this does help in cooling one down for at least a while. Just hoping that this can help in bringing down the electricity bill too!!!



Ingredients

2 large ripe mangoes
4 tbsp. sugar
2 tbsp.  Water
1 lime/ lemon juice (freshly squeezed)
1 tsp. lemon rind (grated from one lemon)                  

In a pan, mix the sugar, lemon juice and water and heat it till the sugar dissolves. Remove from heat and let the syrup cool completely. Keep it in the refrigerator until chilled.

Peel off the skin of the mangoes and slice them.
Pour the syrup evenly over the mango slices and sprinkle with lemon rind.

Cover and chill in the refrigerator before serving.
 MMMMmm… yummy delicious golden mangoes!!!!!
