Dad's Fav Fried Rice

This one is for my Dad. This was the first dish I ever made for him and he simply loved it. This is simple yet tasty egg fried rice. You can add veggies of your choice. This is a simple version of the regular fried rice & it doesn’t even take much time to cook.



Ingredients
  • 2 cup basmati rice (soaked in water for 30 minutes)
  • 4 cups of water
  • 1 ½ Veg stock bouillon cubes
  • 2-3 tbsp. chopped coriander leaves
  • 2 tsp. soya sauce
  • 2 eggs lightly beaten with 2 tsp. pepper powder
  •  ¼ cup corn, capsicum, Onions chopped, green peas

In a deep bottom non-stick pan, add rice, soya sauce, veg stock cubes and chopped coriander leaves. Stir and add water. Cover and cook for about 15 minutes.

In another pan add 1 tbsp. veg oil and add all veggies. Stir fry for 5 minutes. Add to the rice. In the same pan add egg and scramble them.

Now mix everything with rice and garnish with coriander leaves, and enjoyyy!!!
